Các nguyên liệu và gia vị còn lại gồm 2 tép tỏi băm, 2 muỗng canh đường, 1 muỗng cà phê sốt me ( hoặc 1/3 nước cốt me dằm đều được), 200 ml nước lạnh hay nước dừa tươi, 2 muỗng canh nước mắm, 2 trái ớt băm nhỏ cho hết vào 1 tô to hòa đều.
Bắc chảo lên bếp, cho vào 3 muỗng canh dầu, chờ dầu nóng cho cá vào chiên với lửa vừa. Cá vàng hai mặt thì đổ hết chén gia vị và cà chua băm vào đậy nắp rim lửa thấp cho đến khi sốt sánh cá thấm gia vị, nêm nếm lại cho vừa ăn là tắt bếp.
